If you're eating bread/pasta/rice (carbs) - this converts to sugar within your digestive system. This creates an 'artificial sugar high' and when it wears off - you can 'crash'.
I switch my diet up from 4 - 5 days of low carbs and then a day or 2 of high carbs. I notice a big difference in my energy levels after I eat, which ever day I'm on.
I also am one that has to eat often. Like every 3 or 4 hours or I feel light-headed. I've never tested positive for diabetes either (though it runs in my family), I believe that I'm just more sensitive to my blood sugar levels than the 'average person'.
Who knows, maybe it is an ADD thing for some of us. I was reading last night how we have a tendency to have issues with light, sound, and touch. Certain pitches of sound can extremely annoy me. Lights can at times push me into a migraine. And I've always had a fondness for touching things - if I walk into a store, I want to touch all the clothes, furniture, items, etc. It used to drive an ex-boyfriend of mine nuts. I would constantly hear "can't you stop touching everything?!?" I didn't even realize that I did it as much as I do until then.

Had my thyroid checked and re-checked in 2000. Had the symptoms all my life. Nothing was wrong with any hormone levels.Do a google search for Merck Manual, hypothyroidism
They changed the standards for determining hypothyroidism in 2002. There are also different TSH levels involved. The only one normally tested for in 2000 was TSH3. Many drs still only look at that but I know from experience that the other levels can be off while the TSH3 seems normal.
You could ask your dr if he checks for all three levels and uses them to diagnose. If he doesn't, I would look for another dr. I did and I finally got the treatment I needed. I had been taking Synthroid which only works on TSH3 levels. I needed one which covered them all.
Hypothyroidism is often misdiagnosed as ADHD so your symptoms may go away if that is what you have and it is treated properly.
As far as digestive problems, a sensitivity to a certain food can cause them. I have a problem with wheat (gluten) and chicken. If I limit them in my diet, I have fewer problems. I don't go without, I just eat less. My SIL is allergic to gluten and is healthier, more energetic and has lost weight since eliminating it completely from her diet.
